When you record a conversation, you have the option to choose:

(1) Single channel: to record your and the other party's conversation altogether in one channel (track).

(2) Double channel: to record your conversation in one channel (track) and the other party's in a secondary channel (track).

The double channel option will have bigger file size than the single channel option, but it has better quality.
